Cranberry Chutney

Cranberries are often a popular part of Thanksgiving celebrations in the form of cranberry sauce. Thus, I decided to add a little Indian touch to it and make it a chutney. cranberries are high in nutrient and antioxidants. health benefits of consuming cranberries include lowered risk of urinary tract infections, prevention of certain types of cancer, improved immune function, decreased blood pressure. Ingredients   fresh cranberries - 1 cup Red chilies - 3 Pearl onions- 2 chopped garlic chopped - 3 cloves ginger sliced - 1 piece green coriander bunch - ½ Urad dal, channa dal - 1 tsp Pepitas - 2 Tsp Mustard seeds- ⅙  tsp Oil -  1 tbsp Salt - according to taste Directions Heat some oil in the pan and add mustard, once it starts to crackle add urad dal, channa dal, and red chilli. Fry for few mins. Add garlic once the garlic is roasted add ginger and onion (saute well) and then add the cranberries. Let it cook on

Dahi Pudina Chutney

This dish can be used as a dip for kabobs, spread for sandwich/burgers, or as a dressing for salads. pasta Ingredients Pudina - ½ cup Coriander - ⅓ cup Pearl onions - 3 Garlic - 2 cloves Green chillies - 2 adjust according to taste Yogurt - ½ cup (Thick consistency) Salt - adjust according to taste Method Grind all the ingredients together, into a smooth paste, leaving out the yogurt. Mix this into the yogurt, make sure to mix well. Notes Make sure NOT to grind the yogurt along with the other ingredients. Also, use yogurt that is thick in consistency.

Today I had gone hiking with my friends, and as usual,  we ended our 2 hours hike, with a fun picnic. I thought I would contribute something healthy yet portable, so, I decided to make a panini using rotis. As all of my friends loved the dish I decided to post this recipe. Ingredient: 1. Wheat chapatti 3-4 2. Gram flour 6-8 3. Carom seed 1 tsp each 4. Onion - 1 finely chopped 5. broccoli - 1 big floret finely chopped 6. Spinach - ½ cup chopped 7.Red chili -  ½ Tsp 8.Dhania powder - ½ tsp 8. Ghee/oil 3-4 Tsp 9.water - ⅓ cup 9.salt - As needed 10.cheese - optional Method In a bowl add the gram flour carom seeds, finely chopped onion, broccoli, chili powder, dhania powder, and water and mix well to make a paste. Apply this paste on the roti if adding cheese add it on the applied paste and cook the rotis well on both sides. The roti is now ready to eat. Serve with Dahi pudina chutney. Ragi Semiya

Ingredients for Ragi sweet Semiya Cooked ragi semiya - 1/2 cup Grated Coconut - 3 Tbsp (adjust according to taste) Brown Sugar - 2 tbsp (adjust according to taste) Cardamom powder - 2 tsp Ingredients for Ragi Upma Cooked ragi semiya - 1/2 cup Onion - 1 Green chilli - 2 Ginger -⅓ inch grated Garlic - 2 pods chopped Oil - 1 tsp Mustard - 3/4 tsp Urad dal - 1 tsp Chana dal - 2 tsp Peanut - 1 tbsp (optional) Curry leaves - 5-6 leaves Salt - As per taste Method to cook Ragi Semiya  Soak ragi in water for 3 minutes. Drain water completely. steam for 4-5 minutes in a steamer (Idli pot), Once done remove and keep aside. Method to cook Ragi upma In a kadai, heat oil and temper with Mustard,Urad dal,Chana dal,and Curry leaves. Then and sliced onion, slit green chilli and grated ginger. Fry till onion turn transparent. Palada Pradhaman

Karthikai month is an auspicious month. In order to mark the start of this auspicious month, I have made this traditional Palada Pradhaan (Milk, Rice/Wheat Ada payasam). Below is the recipe to make Palada Pradhaman. Ingredients Rice Ada -1/2 cup (I used ready made rice ada) Milk - 4 cups Brown Sugar - 3 tbsp Cardamom powder-1/4 tsp Roasted Cashew nuts - 4(optional) Sliced Almonds - 1 tsp (optional) Saffron - 2-3 strands(optional) Method Boil the water in a pan till rolling boil. Add the ada and Switch off flame, cover and keep it aside for 30 minutes. Drain the ada and rinse 2  times under cold water to remove all the excess stickiness Set aside in water until you add it to the payasam. Boil the water in a pan till rolling boil. Cilantro pesto Chickpea Rotini Pasta

  Today I will post a recipe of chickpea rotini pasta that I got from Costco. To go with the chickpea pasta I thought I can make cilantro pesto. Below are the ingredients and method to do this pasta. Ingredients To make pasta Water - 12 cups Chickpea Rotini pasta - 12 oz or 2 cups(1 bag) Salt - ½ tsp Oil - 1 tsp Ingredients to make Cilantro pesto Cilantro - 1 big bunch Garlic Cloves - 2 Almonds - 10-12 Pepitas - 2-3 tsp Cheese - ½ cup Salt - ½ tsp (adjust according to taste) Lemon/Lime - ½ Green chilies  - 1 (adjust according to taste) Pepper powder(Optional) - according to taste Olive Oil - ⅓ cup Method to make Cilantro pesto 1. Wash and cut the Cilantro along with the stem. 2. Add cut cilantro, garlic, green chilies, almond and pepitas in a food processor or blender and 3.grind coarsely. 4. Add olive oil slowly and blend for a few seconds. Then add grated cheese and blend again for a few more seconds. 5. Add salt and pepp
