Vegetable Stuffed Omelette



Eggs are a good source of protein. They keep you feeling fuller for
longer and will help with weight loss. Eggs and vegetables are the ultimate duo for a
healthy breakfast and wonderful start to your day.


Ingredients


Eggs - 2
Spring onion - 1 bunch finely chopped
Bell pepper - finely chopped
Zucchini - finely chopped
Broccoli - finely chopped
Carrot - finely chopped
Spinach - ¼ cup finely chopped
Mushroom - ¼ cup finely chopped
cauliflower - ¼ cup chopped
Fresh coriander- chopped
Mozzarella cheese - shredded
Oil - 2 Tsp
Egg masala - 1 tsp
Salt - as required


Egg masala
Turmeric powder - ¼ tsp
Pepper powder - ¼ tsp
garlic powder - ¼ tsp
chilli powder - ¼ tsp
coriander powder - ¼ tsp
garam masala powder - ¼ tsp


Method


Add all the vegetables to the air fryer and then add salt and egg masala
mix well and air fry for 6 minutes 390 degree Fahrenheit.




In a bowl beat eggs adding salt and egg masala until mixed well.
Heat a skillet spray some oil add then pour the egg mixture on to the hot skillet.
Cook the omelet on both sides. Now on one side add the cheese and the air fried vegetables.


Note


Mix required salt to the egg masala and keep it in a shaker.
you can use it to make your omelet.
Pre-cut vegetables can be frozen and used in the morning for a quick breakfast.
Vegetable egg bhurji can also be made using vegetables.
which will be a quick and fresh side dish for rice.
