Pudina Thokku


Pudina/Mint is loaded with antioxidant.
Mint contains menthol is a natural decongestant helps during cold and cough.

Ingredients:

Pudina - 3 cups
Dry Red Chili - 20 #
Tamarind - Size of a gooseberry
Fenugreek - ½ Tsp
Mustard seeds - ½ Tbsp
Hing - ¼ Tsp
Oil - 4 Tbsp
Salt - To Taste

Method:
Wash and dry pudina leaves and keep aside.
Heat oil in a pan and add mustard seeds and after it pops
add fenugreek and roast well. To this add the dry red chilis and roast.
Now add the tamarind and saute well. Grind this mixture.



Heat oil in a pan again and add the pudina leaves.
Saute this well until the pudina reduces in size.
Add pudina and very little water and oil to the ground
mixture and grind well.



Then keep a pan and heat oil add the ground mixture.
Saute well till the oil oozes out.


Now serve with hot rice, idli, or dosai.

Note:
If stored in a fridge can be used for up to a month.
Use a clean spoon every time to improve shelf life.
Use very little water or no water to grind the thokku.

You can also add garlic to give nice flavor in thokku.
