Kovakkai Fry


Kovakkai is known as ivy gourd in English. It is a good source of vitamin B.
According to Ayurveda, eating few raw kovakkai will treat mouth ulcers and stomach ulcers.
This vegetable also lowers blood glucose.
Eating this vegetable once a week is good for health.

Ingredients:
Kovakkai - 1 Cup Chopped
Chili Powder - 1 Tsp
Turmeric Powder - ¼ Tsp
Jeera - ½ Tsp
Curry Leaf Powder - ½ Tsp
Fennel Powder - 1 Tsp
Oil - 1 Tbsp
Salt - To Taste

Method:

Heat oil in a pan. Add jeera, then add chopped kovakkai and saute this well.
Now add salt, turmeric powder, chili powder, and curry leaf powder.
Mix well. Sprinkle some water then close and cook.

Once the kovakkai is cooked well add the fennel powder.
Mix well and serve hot with rice or roti.


Note:
Can use curry leaves instead of the powder.
Using coconut oil gives a nice flavor to the dish.
