Vegetable Rava Upma
Upma is a simple and classic south Indian dish that is usually
served as a tiffin Item. This upma is made of Rava- granulated wheat.
Ingredients
Rava - 2 cups
Onion - 1 chopped
Tomato - 1 chopped
Carrot - 1 chopped
Peas - ¼ cup
Green chilies - 3 chopped
Ginger - grated ½ tsp
Garlic - 2 cloves chopped
Coriander - chopped
Mustard seeds - ½ tsp
Urad dhal split - 1 ½ tsp
Chana dhal - 1 ½ 
Cashew Nuts - Handful broken into pieces
Curry leaves - 5
Oil - 2 Tbsp
Hot Water - 2 cups
Salt as required
Method
Heat a pan and add some oil. When the oil is hot add 
the following and saute well: mustard seeds, chana dal,
urad dhal, green chilies, ginger and garlic.Now add the onion and saute well. 
Then add  tomatoes, carrots and peas along with salt. 
Now keep the stove in low flame and keep the pan lid closed 
until all the vegetables are cooked well 
Add the rava to the cooked vegetables and fry well. 
Meanwhile, boil 2 cups of water.
Once the rava is roasted well, add the boiling water immediately 
and mix well without any lumps.
Cover the lid and cook for 15 min in low flame. 
Once done, add some ghee/coconut oil on top.

Notes
Upma is usually made of granulated wheat
(Rava, Sooji and Semolina are all essentially the same) 
but it can also be made of rice!
