Kale Lemon Rice



Ingredients


 Rice -1 cup
 Sesame seed oil -2 tsp (For rice)
 Lemon -1 (juice it and keep aside)
 Salt to taste

 For  seasoning

 Oil-3 tsp
 Mustard seeds -1 tsp
 Urad dal (split ones) -2 tsp
 Channa dal/kadalai paruppu -2 tsp
 Roasted peanuts - 2 tbsp
 Roasted Cashewnuts- 5 -6
 Red Chillies -2
 Asafoetida -2 pinch
 Green chillies -2
 Finely chopped ginger-2 tsp
 Turmeric Powder -1/2 tsp
 Curry leaves - few
 Finely chopped Kale -½ cup

Method

Heat 1 tsp oil, add mustard seeds, when mustard splutters , add urad dal, channa dal, red chillies,
roasted peanuts,cashewnuts  and asafoetida. When dal turns slightly brown, add green chillies,
ginger, turmeric powder, curry leaves and finely chopped Kale.Saute until the Kale are cooked well.
Switch off the stove and add the squeezed lemon juice, add salt to it.Cook rice in a way that each
grains are separate. Spread it on a plate, mix  sesame seed oil to it, so that the grains will not stick together.Now add the lemon juice mixture to the rice and mix well.Taste and see. If required add more salt and lemon juice.Kale lemon rice is ready to serve.Enjoy with any pickle/potato curry.




Note - Please Do not cook/boil after adding the lemon juice.As lemon juice will give a bitter taste when cooked or boiled.

You can use fresh/frozen kale.
