Aubergine Roast
Ingredients
Aubergine - 1
Pepper powder - ¼ tsp
Jeera powder - ¼ tsp
Garam masala powder - ¼ tsp
Chilli powder - ¼ tsp
Coriander powder - ⅓ tsp
Turmeric powder - ⅛ tsp
Curry leaves - 3-4 chopped
Salt - As per taste
Oil - 2 Tbsp
Method
Wash and slice Aubergine into ¼ inch circles. Add all other ingredients in a
bowl except oil and mix well with little water to make a thick paste.
Marinate the Aubergine on both sides and leave for 10 - 15 min.
Heat a pan and roast all the marinated Aubergine using little oil.
Roasted Aubergine is now ready to enjoy with curd rice.
