Eggless carrot cake

Eggless carrot cake Whole wheat flour/all purpose flour - 1 ½  cups Baking powder - 1 tsp Baking soda - 1 tsp Sugar - ¾ cup Salt - ¼ tsp Coconut oil - ¼ cup Milk - ¼ cup Water - ¼ cup Grated carrot - 1 cup Vanilla extract - 1 tsp Cinnamon grounded - 1 tsp Nutmeg grounded - 1tsp Frosting Cream cheese - 8 tbsp Butter unsalted - 2 tbsp Powdered sugar - 1 cup Vanilla extract - ¼ tsp Walnuts chopped  - as required Pistachios chopped - as required Method for carrot cake Spray oil to a baking tray and keep ready.Sieve all the dry ingredients and keep. Take sugar and butter in a bowl and beat well then add milk and vanilla extract beat well to this add dry ingredients mix well then fold in the grated carrots into the batter and then add raisins and sliced almonds to the batter. Bake the batter at 350 degree Fahrenheit for 40 minutes.  Method for frosting  Add butter,cream cheese in a bowl and beat well to it add the powdered sug

Masala Khichdi

Masala khichdi Mixed Multi millets - ½  cup Moong dal - ½ cup Onion - 1 chopped Tomato - 1 chopped Ginger - ½  inches finely chopped Garlic - 4-5 pods finely chopped Green chillies - 2 finely chopped Mustard seeds - ¼  tsp Cumin - ¼ tsp Split urad dal - ½ tsp Chili powder - ½ tsp Coriander - ½ tsp Garam masala - ½ tsp Turmeric powder - ¼ tsp Hing - 1 pinch Dried red chilies - 2 Cashew Nuts - 1 tbsp Coriander leaves - chopped Curry leaves - 5- 10 leaves Cashew Nuts - 1 tbsp Oil - 1 tbsp Ghee - tbsp Salt - as required Method Wash and soak mixed multi millet and mung dal for 10 min. Pressure cook the dal millet mixture. Heat a pan and add oil when the oil is hot add the mustard when sputters add split urad dal,chopped ginger,chopped garlic and chopped green chilies and saute well.to this add chopped onion and saute well then add chopped tomato and salt mix well then add all the spices and mix well then add a little hot water and

Kale Soup

Kale barley soup Kale is a good source of fiber, calcium,vitamins, and antioxidants known as alpha-lipoic acid. This also helps prevent oxidative stress-induced changes in diabetes patients. Baby kale - 2 cups Barley powder - 2 tbsp Small onion chopped- 5 Tomato chopped-1 Garlic pod chopped- 3 Cumin powder- 1/2 tsp Pepper powder - 1/2 tsp Water - as required Salt - to taste Method Boil water, add in the chopped onion, garlic, and tomato. Let it cook. Mix barley with some water to a smooth consistency, without any lumps. Add this to the cooking mixture and boil till the barley is cooked. Blanch the baby kale and add to the blender then add the cooked mixture, spices and salt and blend to a smooth consistency. Serve the yummy soup with a toasted bread. Note: You can use any spinach in the place of kale and also you can add small amount any vegetable of your choice. Can use quick oats in place of barley. Adjust pepper and salt as required.
